Sesame commonly known as “til” is one of the important edible oilseeds and cultivated in India. It is grown in different seasons and regions of the country. The crop is also grown more than one season in the same region. The crop is also grown as kharif crop. In central and western regions comprising parts of Madhya Pradesh, Andhra Pradesh, Gujarat and Maharashtra, it is grown in September – January. Sesame has also gained popularity as a summer crop (January – May) after potato or late rice in West Bengal, Bihar and Orissa. However, in South India, the crop is taken in all three seasons. These seeds come in various colors, including white, black, and brown, and are widely used across different cuisines worldwide.

  1. Kharif: July – August to November - December under rain fed conditions.
  2. Rabi: Between November and January – February
  3. Summer: Irrigated crop between March and June

 Application

  • Sesame is usually rich in oil (50 %) and protein (18-20 %).
  • Sesame seeds are a powerhouse of nutrients, containing healthy fats, protein, fiber, vitamins (B-complex, E), and essential minerals (calcium, iron, magnesium, zinc).
  • Sesame seeds are an excellent source of calcium, contributing to bone health and supporting bone density, making them beneficial for individuals at risk of osteoporosis.
  • Nearly 78 % of the sesame seed produced in India is used for oil extraction, 21.5 % for sowing purpose and rest is used in confections and in religious Hindu ceremonies.
  • Nearly 73 % of the oil is used for edible purposes, 8.8 % for hydrogenation, and 4.2 % for industrial purpose in the manufacture of paints, pharmaceuticals and insecticides
  • Black sesame seeds are often featured in desserts, providing a unique colour and flavour. They can be incorporated into sweets, puddings, and even ice cream.

  • Oil is reach in saturated, mono and poly unsaturated fatty acids.
  • Sesame seeds are a culinary treasure, enhancing the flavour and texture of various dishes. Sprinkle them on salads, stir-fries, and soups for a nutty crunch
  • It is also used as perfumed oil.
  • Lower grade oil is used in soap making industries.
  • It finds also a number of medicinal uses.
  • Sesame seeds contain nutrients that contribute to skin health and may have benefits for hair, including promoting shine and strength.
  • The oil cake is an edible cake. It is eaten mixed with sugar by many peoples.
  • It is also used as a cattle feed especially for milch animals.
